Answering the tricky question on whether it is okay to put ice in wine, Kimberly Prokoshyn, head sommelier at New York City’s Scampi, opines that diluting wine is almost certain to remove all of what makes the wine special. Pinot Grigio advises to put red wine in the fridge for 30 minutes beforehand and take white wine out about 15 minutes beforehand.
