Pongal is a favourite porridge of South Indians. It is made with lentils and rice .Pressure cook lentils, rice, ginger, turmeric water, black pepper and salt for 8 minutes. Temper mustard seeds with ghee or butter. Add red chillies and cashew nuts and cook for 30 seconds. Add curry leaves and pour over rice and lentil mixture. Stir well and serve hot.
