Kem Chan began his culinary journey, pushing a dim sum trolley around the tables. He left schooling at the age of 12. He learnt the art of cooking the hard way. “Back then, if you wanted to learn, you have to beg the master to teach you,” he says. He has come a long way to win 3 Michelin stars to become an executive chef at a luxury 5 star restaurant.
